Cajun spice has eluded me most of my life. I do not care for spicy things, and therefore I always assumed that Cajun spice was way to spicy for me. As it turns out... that is not the case. I started with a supermarket blend and slowly developed me own flavors and tastes from there. One of my favorite recipes with this is Cajun potatoes & sausage in the crock pot or instapot.
