Ingredients:
1 cup of Apricot preserves
2 tablespoons Balsamic vinegar
1 tablespoon soy sauce
1 tablespoon Dijon Mustard
2lb Pork Tenderloins
1 teaspoon salt
1/2 teaspoon black pepper
Directions:
Preheat the grill to medium high heat,
Combine the apricot preserves, vinegar, soy sauce, and mustard, and microwave for 1 minute on high.
Season tenderloins all over with salt and pepper.
Grill tenderloins covered for about 20 minutes or until the internal temp reaches 145 degrees. While grilling baste with the apricot mixture and turning for even cooking.
For best results baste heavily towards the end of grilling.
Let pork rest off the heat for 5 minutes before slicing.
