Veggie Kabobs

Ingredients:

2 Red Bell Peppers, cut into 1 inch pieces

2 Zucchini, cut into 1 inch pieces

2 Yellow Squash, cut into 1 inch pieces


3 Tablespoons Balsamic Vinegar

2 Tablespoons Olive Oil

2 Teaspoons Italian Seasoning

2 Cloves of Garlic, minced


1/2 Teaspoon Salt

1/2 Teaspoon Pepper


Directions:

  1. Preheat the grill to medium - high heat.

  2. Alternating, thread the peppers, zucchini, and squash onto metal skewers.

  3. You should be able to get 6 (12 inch) skewers.

  4. Combine the vinegar, oil, Italian seasoning, and garlic. Mix well.

  5. Brush 1/2 of the mixture all over the kabobs, and then season them with salt and pepper to taste.

  6. Grill, covered, for 8 minutes or until the vegetables are tender. While they are grilling baste the kabobs with the remaining mixture, and turn occasionally for even cooking.
