Bursting with apple cider flavor, these cookies are a true delight for the taste buds. This cookie reminds me of apple picking in the fall with the family. So from our family to yours, enjoy.
Ingredients:
1 Cup (2 sticks) of Butter, Softened
½ Cup Brown Sugar
½ Cup White Sugar
2 Eggs
1 Teaspoon Vanilla Extract
10 Packets (1 entire 7.4oz Box) of Spiced Apple Cider Instant Drink Mix
3 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 ½ Teaspoon Cinnamon
½ Teaspoon Allspice
Sugar & Spice Mix for Decoration:
1/4 Cup White Sugar
½ Teaspoon Cinnamon
1/4 Teaspoon Nutmeg
1/8 Teaspoon Allspice
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl or stand mixer, cream together butter and both sugars until light, fluffy, and smooth, (about 2 minutes).
3. Add eggs one at a time, then add vanilla and beat together until creamy, (about 2 minutes).
4. Next add the spiced apple cider packets and mix together.
5. In a separate bowl mix together flour, baking soda, baking powder, cinnamon, allspice, and salt, with a whisk until well blended.
6. Add the dry flour mixture a little at a time to the butter mixture and stir together until just combined.
7. Line a baking sheet with a Silpat or parchment paper.
8. In a small shallow bowl mix together the sugar and spice mix for decorating. Set aside.
9. Using a cookie scoop or tablespoons, portion the dough into large walnut sized balls.
10. Roll each dough ball in the sugar and spice mixture and put onto the baking sheet about 2 inches apart.
11. Bake in a preheated oven for 9-11 minutes. The cookies should just beginning to be golden brown around the edges. Be careful not to over bake. For a soft chewy cookie they should be very soft when they are pulled out of the oven and will firm up as they cool.
12. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
13. Store in an airtight container.
