If you like eggnog then you will love these cookies. The eggnog is mixed right into the dough for a great taste and soft chewy cookie. If that wasn’t enough eggnog for you then wait till you frost them with the eggnog frosting made with more eggnog right in the mix. Now you can have this holiday favorite drink in cookie form.
Ingredients:
Cookies ~
1 Cup (2 sticks) of Butter, Softened
1 Cup Brown Sugar
3/4 Cup White Sugar
2 Eggs
1/2 Cup Eggnog
1-1/2 Vanilla Extract
3-1/2 Cups Flour
1 Teaspoon Baking Powder
1 Teaspoon Baking Soda
1/4 Teaspoon Salt
2 Teaspoons Nutmeg
1-1/2 Teaspoons Cinnamon
Frosting ~
1/2 Cup (1 stick) of Butter, Softened
3 Cups of Powdered Sugar
1/4 Cup Eggnog
3/4 Teaspoon Nutmeg
1/2 Teaspoon Cinnamon
2 Tablespoons Disaronno Amaretto Liqueur
Makes about 3 dozen.
Directions:
1. In a large bowl or stand mixer, cream together butter and sugars until light, fluffy, and smooth, (about 2 minutes). Add eggs one at a time, then add vanilla and eggnog, beat together until creamy, (about 2 minutes).
2. In a separate bowl mix together flour, baking soda, baking powder, salt, cinnamon, and nutmeg with a whisk until well blended. Add the dry flour mixture a little at a time to the butter mixture and stir together until just combined. Cover and chill in the fridge for about 2 hours or overnight, or in the freezer for about an hour.
3. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with a Silpat or parchment paper.
4. Using a cookie scoop or tablespoons, portion the dough onto the baking sheet about 2 inches apart.
5. Bake in a preheated oven for 9-12 minutes. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
6. For the frosting ~ Beat the butter until it is light and fluffy.
7. Add the eggnog, rum, nutmeg, and cinnamon to the butter. Mix until well combined.
8. Add the 2-3 cups of powdered sugar a little at a time until well blended. Use the eggnog to adjust the consistency if needed.
