Ingredients:
1 (12oz) package Frozen Corn Kernels
1 Onion, diced
3 Tablespoons Olive Oil, divided
1 (15oz) can Black Beans, drained & rinsed
2 Tablespoons Lime Juice
1 (4oz) can diced Green Chilies
2 Teaspoons Chili Powder
1 Teaspoon Cumin
12-Soft Taco Flour Tortillas
1 (8oz) package Shredded Pepper Jack Cheese
1 (16oz) jar Salsa
1 (8oz) container Sour Cream
Instructions:
Preheat oven to 400 degrees.
Cook the corn and onions in 2 Tablespoons of hot olive oil in a large skillet over medium-high heat, 6 minutes.
Mash about 1/2 of the beans with lime juice.
Add all the beans, chilies, chili powder, and cumin to the pan, and cook for 4 minutes, or until heated through.
Spread about 3 tablespoons of the bean mixture down the center of each tortilla.
Sprinkle with cheese on top of bean mixture, about 2 tablespoons worth.
Roll up each tortilla, securing it with a toothpick, if needed.
Place the filled tortillas into a greased large rimmed cooking sheet, seam side down.
Brush with 1 tablespoon olive oil, and bake for 20 minutes or until golden brown.
Serve with sour cream and salsa.
