Cajun Shrimp, Sausage, & Veggie Skillet

This dish is an easy meal that is so delicious and pretty to look at. You can add as much or as little Cajun seasoning as you like. It's not overly spicy, but it does have a little zing to it. This would be perfect to serve for company because all of the vegetables and shrimp make it look like something out of a magazine, plus it's really no fuss, and cooks all in one pan so it doesn't make a lot of dishes either. It really is a winner on every level!



Yields - 6 servings

Per serving - 1 leanest, 1 healthy fat, 3 greens, 2 condiments


Ingredients:

28oz Cooked Shrimp, take the tails off

12oz Turkey Smoked Sausage

3 Cups of Zucchini

3 Cups of Yellow Squash

1 Cup of Asparagus

2 Cups of Red Bell Peppers

2 Tablespoons of Olive Oil

2 Tablespoons of Cajun Seasoning, (or to taste)


Directions:

  1. Chop up all the vegetables and sausage into larger bite size pieces.

  2. Put all of the veggies and shrimp, and sausage into a large pan or bowl. (I like to just put it into the pan to truly make it a one pot meal).

  3. Season with salt & pepper, and Cajun seasoning. Then toss to coat with olive oil.

  4. Turn the heat onto medium-high and cook for 7-10 minutes or until the veggies have softened. You may want to start with your peppers 1st because they take the longest to cook through.

  5. Cook until the shrimp is a vibrant pink and the vegetables are tender.

  6. Garnish with parsley if desired, and serve immediately.


Notes: If you find that you have added too much Cajun seasoning you could always add a little bit of fat free plain Greek yogurt to cool down the spice, but I find that 2 tablespoons is perfect once you let it all meld together for a little bit.
