This is a lean and green meal that at first I didn't have much hope for, honestly. I mean I thought that it would be edible at best. Let me tell you how shocked I was that it was a truly delicious meal. Who could have guessed?! It made me a believer. I made a few changes to suit my family's tastes, like leaving out the mushrooms, but it was cheesy and filling, and really tasty. It was also super simple to make. If you are skeptical about lean and green meals or just healthy meals in general I suggest that you give this one a try!
Lean & Green Per Serving- 1 Lean / 3 Green / 1 Condiment
Yields - 4 servings
Prep Time - 10 minutes
Cook Time - 20 minutes
Ingredients:
1/2 Cup or 4 oz sliced mushrooms
1 - 12 oz bag of frozen cauliflower rice
1lb of ground chicken
2 cloves of garlic, minced, (or 2 teaspoons of garlic powder)
3 Tablespoons of olive oil
1/2 cup of chicken broth
8 oz reduced fat mozzarella cheese
1 teaspoon of Italian seasoning
2 chopped scallions, (optional for garnish)
Directions:
Brown ground chicken in the pan with mushrooms, cauliflower, and garlic in oil for about 5-10 minutes, or until the chicken is cooked.
Pour in chicken broth, and bring to a boil.
Reduce the heat to a simmer, and let simmer together 3-4 minutes, stirring occasionally.
Stir in weighed mozzarella, and then the Italian seasoning. Stir well, until the cheese is melted and well incorporated. Top with scallions if desired.
