I love oatmeal cookies. These soft and chewy cookies with a hint of cinnamon are just delicious. Keeping it simple with this super tasty cookie just makes it special.
Ingredients:
1 Cup (2 Sticks) of Butter, Softened
1 Cup White Sugar
1 Cup Packed Brown Sugar
2 Eggs
1 Teaspoon Vanilla Extract
2 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 Teaspoon Salt
1 1/2 Teaspoons Ground Cinnamon
3 Cups Quick Cooking Oats
Makes about 3 dozen cookies.
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl or stand mixture, cream together butter and sugars until light, fluffy, and smooth, (about 2 minutes).
3. Add eggs one at a time, then add the vanilla and beat together until creamy, (about 2 minutes).
4. In a separate bowl mix together flour, baking soda, baking powder, salt, and cinnamon with a whisk until well blended.
5. Add the dry flour mixture a little at a time to the butter mixture and stir together until just combined.
6. Stir in the oats.
7. Line a baking sheet with a Silpat or parchment paper.
8.Using a cookie scoop or tablespoons, portion the dough into large walnut sized portions, and place them onto the baking sheet about 2 inches apart.
9. Bake in a preheated oven for 8-10 minutes.
10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
