Ingredients:
2 1/2 lbs Boneless, Skinless Chicken Breasts
1/2 Teaspoon of Salt
1/2 Teaspoon Pepper
3 Tablespoons All Purpose Flour
3 Tablespoons Olive Oil
1 Onion, chopped
1 (16oz) Package of Mushrooms, sliced
3/4 Cup White Wine
1 1/2 Cups Chicken Broth, (low sodium)
1 Tablespoon Cornstarch
1/2 Dried Thyme
1/4 Teaspoon Salt
Directions:
Season chicken with 1/2 teaspoon salt and pepper, and sprinkle with flour.
Brown the chicken in 2 tablespoons hot oil in a large skillet over medium-high heat for 4 minutes per side, then remove from skillet.
Sauté onion and mushrooms in 1 tablespoon hot oil, in the same skillet, for 6 minutes or until browned.
Add wine, and bring to a boil, and cook for 2 additional minutes.
Whisk together the chicken broth and cornstarch, and add to the skillet. Cook for another 2 minutes, stirring occasionally.
Return chicken to the skillet, and cook for 1 minute.
Remove the skillet from the heat, and stir in thyme and 1/4 teaspoon salt.
