I always love it when fresh cranberries come into season. These cookies are delicious plain or glazed. Using fresh cranberries and oranges really sets this cookie apart from others. Awesome tender, moist, and chewy cookies with pops of fresh cranberries throughout.
Ingredients:
1 Cup (2 Sticks) of Butter, Softened
1 Cup White Sugar
1/2 Cup Brown Sugar
1 Egg
1 Orange Zested
1 Orange Juiced
3 Cups Flour
1/2 Teaspoon Baking Soda
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
2 1/2 Cups Cranberries, Cut in Half
Optional Glaze:
1 Orange Zested
1 Orange Juiced
1 1/2 Cups Powdered Sugar
Directions:
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl or stand mixer, cream together butter and sugars until light, fluffy, and smooth, (about 2 minutes). Add the egg, orange juice, orange zest, and beat together until creamy, (about 2 minutes).
3. In a separate bowl mix together flour, baking soda, baking powder, and salt with a whisk until well blended. Add the dry flour mixture a little at a time to the butter mixture and stir together until just combined.
4. Stir in the cranberries.
5. Line a baking sheet with a Silpat or parchment paper.
6. Using a cookie scoop or tablespoons, portion the dough onto the baking sheet about 2 inches apart.
7. Bake in a preheated oven for 10-12 minutes.
8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
9. For the Glaze ~ In a small bowl mix orange zest, orange juice, and powdered sugar until completely blended and smooth. Add more or less orange juice to reach the desired consistency. The glaze should be thick, but still able to be poured.
10. Drizzle the glaze over the cookies, and allow the glaze to set before serving and storing.
