Pistachio & White Chocolate Chip Cookies


I love pistachios and these cookies combine chopped roasted nuts, cake mix, pudding, and white chocolate chips. Great to make when you are short on time or with the kids. These delicious cookies are sure to please and they are super easy to make. You can’t beat that.


Ingredients:

1 Box of French Vanilla Cake Mix

2 Eggs

1/2 Cup Vegetable Oil

2 Teaspoons Vanilla Extract

1 Box Instant Pistachio Pudding Mix

1 1/2 Cups White Chocolate Chips

1 Cup Chopped Pistachios


Makes about 2 1/2 dozen cookies.


Directions:

1. Preheat oven to 350 degrees Fahrenheit.


2. In a large bowl or stand mixer, combine the cake mix and the pistachio pudding mix until well blended with a whisk.


3. Add the eggs, vanilla extract, and veggie oil. Mix until well combined and smooth.


4. Stir in the white chocolate chips and chopped pistachios.


5. Line a baking sheet with a Silpat or parchment paper.


6. Using a cookie scoop or tablespoons, portion the dough into large walnut sized balls and place onto the baking sheet about 2 inches apart.


7. Bake in a preheated oven for 8-10 minutes. Cooking times will vary because every oven is different. The cookies should be set and should just beginning to be golden brown. They should be very soft when they are pulled out of the oven and will firm up as they cool. Leave the cookies in the oven longer if you would like a crispier cookie.


8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
