These soft and gooey cookies are just great. They are a favorite in our home all year long. The browned butter adds something really special to these cookies. You can cut the recipe in half if you would like, but I never like to waste food so I have it using the entire can of pumpkin puree, because what are you going to do with only half a can of leftover pumpkin other than make more cookies? Once you taste them you will be glad that you made the full recipe. These are a fall favorite.
Ingredients:
1 Cup (2 Sticks) of Butter
1 Cup Packed Brown Sugar
1 Cup White Sugar
2 eggs
2 Cups (1 Small Can) Pumpkin Puree
1 Tablespoon Vanilla Extract
3 Cups Flour
1 Teaspoon Baking Soda
1 Teaspoon Baking Powder
1 Teaspoon Salt
2 (3.4oz) Box of Instant Vanilla Pudding Mix
3 Cups Semi-Sweet Chocolate Chips
2 Cups Chopped Pecans
Makes about 5 dozen cookies.
Directions:
1. In a small saucepan over medium heat melt butter and cook until golden brown and frothy. Stir frequently. It will smell nutty as it browns. Remove from heat once golden brown and let cool for at least 15-20 minutes.
2. Preheat oven to 350 degrees Fahrenheit.
3. In a large bowl or stand mixer, beat together the browned cooled butter and sugars until well incorporated, (about 2 minutes). Add eggs one at a time, then add vanilla and pumpkin puree, beat together until creamy, (about 2 minutes).
4. In a separate bowl mix together flour, baking soda, baking powder, salt, and pudding mixes with a whisk until well blended. Add the dry flour mixture a little at a time to the butter mixture and stir together until just combined. Stir in the chocolate chips and pecans.
5. Line a baking sheet with a Silpat or parchment paper. Using a cookie scoop or tablespoons, portion the dough onto the baking sheet about 2 inches apart.
6. Bake in a preheated oven for 10 -12 minutes.
7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
