Who doesn't love a good steak fajita, and this is a foolproof recipe using a sheet tray in the oven that is a family favorite in my house and I bet they will be in yours too! Anyone can make these, even the kids, and they are absolutely awesome tasting.
First get a large (gallon) sized zip-top bag and make the marinade.
Ingredients For Marinade
Olive oil about 1-1/2 cups, you want there to be enough to coat everything well
1 Package of pre-made taco seasoning
Lime juice about 1/4 cup or if you are using fresh juice 1 lime
Garlic powder about 2 tablespoons
Everything listed above goes into the zip-top bag and gets mixed together.
To this bag you are going to add the beef and veggies.
Ingredients for Beef & Veggies
2 packages of stir fry beef from Walmart, these are great because they al pre-sliced nice and thin. Just remember to pull the strips apart as you put them into the zip-top bag.
2 Onions, sliced
3 Bell Peppers, sliced. I personally like the red bell peppers the best.
Toss everything into the bag with the marinade for at least 3 hours or overnight. This recipe is so versatile that you really can't mess it up. You can eyeball the measurements for the marinade and then you can marinate for just a little or for a whole day, either way it comes out great.
Other Things You Will Need
A large sheet pan or two, if it doesn't all fit on one
Flour tortillas
Sour cream
When you are ready to cook up your fajitas preheat your oven to 450 degrees F.
Dump the whole marinade bag onto the sheet tray, and spread out with tongs.
Put it in the oven for 25 minutes, or until your veggies are cooked through (watch that you don't over cook the meat or it will be leathery).
Then add cooked fajitas to a flour tortilla with sour cream. (Tip: instead of spooning the sour cream on top of the finished product, try putting it on with a butter knife on the bare tortilla before adding the rest)
Ta-Da!! The best and easiest steak fajita every time! I have always done this with beef stir fry steak, but I may try it with chicken in the future for a lighter version. But then again why fix what isn't broken? I promise you will not be disappointed if you give these a try! As a bonus, these reheat extremely well and are great as leftovers the 2nd day too.
