This one is a healthy hit that even the kids will love. My family loves zucchini so that is what we used, but you could also use yellow summer squash in place of the zucchini. This is also easily made into a vegetarian dish by leaving out the pepperoni. I love cheese. Cheese of any kind, especially the ooey, gooey, melty kind! Not to mention that I love pizza!
If you are a pizza lover, like me, but need to find a healthier way to enjoy our guilty pleasure, you could try this recipe, or try using a cauliflower crust instead. I like the Caulipower brand frozen cauliflower crust that you can then build your own pizza on top of. They come two crusts to a box, and like I said they are frozen solid. Bake them up at 400 degrees, and you have a healthier version of your guilty pleasure. I get them for a good price at my local Walmart.
Yields - 3 servings
Lean & Green Info - per serving
1 oz of protein,
3 vegetables,
1 fat,
1/3 of a condiment
Ingredients:
3 Large Zucchini, sliced into 1/4 inch rounds - total weight is 1 1/2 lbs
1 Tbsp. of Extra Virgin Olive Oil for brushing
1/4 cup of low carbohydrate marinara or pizza sauce
1 1/2 oz shredded part skim mozzarella cheese
1 1/2 oz mini turkey peperoni
Dried Oregano for sprinkling
Directions:
Preheat the oven to 400 degrees
Place sliced Zucchini on baking sheet and brush with olive oil
Bake until slightly tender, 5 minutes
Spoon a thin layer of pizza sauce over each slice, and top with mozzarella cheese, and mini pepperoni
Sprinkle with Oregano
Bake until the Zucchini is tender and cheese is melted, 10 minutes
